    • Season: Toss the carrots with olive oil, and add the herbs, garlic, salt, and pepper.

    • 2 tablespoons extra virgin olive oil
    • 1 tablespoon thinned fresh thyme leaves
    • ¼ cup chopped fresh Italian parsley, more more for garnish
    • 3 garlic cloves, thinned
    • 2 teaspoons kosher salt
    • Freshly ground black pepper, to taste
